experience of choosing sauce for daily
cooking as an everyday home cook for
four children when I choose sauce I
consider three factors healthy delicious
and easy to use if you are looking for a
good sauce for cooking or replace the
old sauce with a better one you can
refer to this video first choose 100%
approved sauce traditionally brewed
sauce usually takes a month even years
to make it is time consuming with high
cost but this kind of sauce is healthier
and more delicious try to avoid
formulated sauce which more or less
contains chemically made sauce read the
ingredients carefully when shopping for sauce
brutha sauce usually contains salt water
soybean farming with such things fish
sauce usually contains fish salt and
water if you are seeing some complicated
and strange chemical name be careful
other than ingredients needed for
fermentation this one contains flavor
enhancers and caramel for coloring
a few food enhancers here this one
claims no MSG but contains other flavor
enhancer this sauce contains three
flavor enhancers and oyster flavor some
claimed they are brewed sauce but they
add MSG as flavor enhancer or they say
no MSG but they add other enhancer
instead this kind of information is very
misleading the longer the sauce get
brewed the more umami it will produce
some manufacturers reduce the cause by
brewing for short time and add enhancer
to make up umami even though a lot of
so-called experts say msg is safe and
healthy I don't buy it a lot of people
including myself after eating food with
msg and it feel very thirsty and
uncomfortable how can they say something
healthy if our body tells us no this is
why I never use msg or chicken extract
in my cooking a lot of sauce contains
preservative especially sauce with low
salt and fortunately in order to keep
the sauce quality for certain time they
have to do that and we have to accept
that for home cooking I suggest to use
original sauce instead of flavored sauce
for example mushroom flavored sauce or
is the flavored sauce they usually add
extract or artificial flavors which are
not something good for you if you like
mushroom flavor use real mushroom there
are two kinds of thoughts I don't use
first is oyster sauce real oyster sauce
is made from boiling oyster in water
until the soup concentrates into paste
you must know oil stir is not cheap and
a bottle of sauce make from oyster must
be very expensive so what is in the
oyster sauce sold in supermarkets which
priced at a few dollars this one
contains oyster accurate a bunch of
flavor enhancers and oyster flavor
this contains oyster but main
ingredients is soy sauce thicken with
starch oyster sauce is not brewed
product if you like always the flavor you can
fresh oyster in cooking or make your own
austere broth from real oyster the
second one is dark soy sauce
it contains little umami and usually is
used to add color to the food in my
opinion clean food with original color
and flavor is more appetizing if it is
necessary to a caramel color to your
food fry some sugar in oil to make fresh
caramel after this we should be able to
rule out a lot of sauce choose one and
try until you find the one you like and
feel comfortable eating it I grew up
with soy sauce in my family cooking but
now I only use it for dipping because I
have found that sauce pate is much better in cooking
they are fava bean sauce paste soy bean
sauce paste shrimp paste and so on
usually thick paste or solid unlike soy
sauce which has gone through a
filtration and refining process sauce
base keeps all the fermented or half
fermented ingredients such as starch
protein oil and so on during cooking
when the paste is fried or braised it
releases more aroma and umami into the
food the starch and oil seal the food
you hold the moisture also because sauce
paste contains little water it will not
bring in extra water in cooking while
maintaining at a high temperature will
help to make more work hey extra water
will bring down cooking temperature
in order to get the best sauce I used to
spend a year to make sauce paste from
scratch after my homemade sauce pace was
harvested and we had our first taste we
were completely conquered by its rich
aromatic and delicious flavor since then
we use sauce paste almost everywhere I
understand you are adopting what I have
said here because famous celebrities are
professional chefs tell different story
but think about this these celebrities
and chefs may make a dish with excellent
flavor smell and taste the first bite is
stunning and the whole meal is fantastic
but they don't care if you feel thirsty
or uncomfortable after that or if this
food will affect your health in
long-term home-cooked food in the other
way it's something you and your family
would sit down and enjoy every day feel
comfortable and satisfied every time so
when we choose ingredients besides the
smell and taste also consider more about
