Herrine Ro, Producer: Hi guys, it’s Herrine.

Alex O’Toole, Producer: And I’m Alex. And we are here today at Republic of Booza to try booza which is over 500-years-old ice cream.

Herrine: My first and foremost question is “How does ice cream get that stretchy?”

Michael Sadler, Co-Founder: Booza is the original form of ice cream that was first developed about 500 years ago in the eastern part of the Mediterranean known as the Levant.

Republic of Booza is bringing these ancient techniques to Brooklyn.

What makes it so stretchy?

Booza is creamier, denser, and smoother than modern ice cream.

This is due to 2 main ingredients:

Sahlab – ground orchid root, Mastic – a resin.

They are mixed with milk. Poured into a freezer drum.

A 3-foot wooden pestle is used to agitate the booza.

Stretched by hand.

Michael Sadler: You take a spoon to booza and you see nothing but pure creamy goodness. Booza historically is only made in one traditional flavor which is Qashta, or candied cream.

Herrine: So now let’s try the original – the OG.

Alex: Qashta.

Herrine: Alright, let’s do it.

Michael Sadler: We wanted to unlock its inner potential as a vehicle for flavors far and wide.

They are experimenting with modern takes on Chocolate and Vanilla… to Sichuan White Chocolate and Bloody Mary Sorbet.

Alex: Every single one of these flavors surprises me somehow.

Herrine: I think I can out pull you.

Alex: I think that you have more practice, but I have a lot of heart.

Herrine: It pulled a little.

Herrine: I’ve seen cheese pulls before but this is the first time I’ve done an ice cream pull.
